Our facility, modern and beautiful, provides an elegant backdrop for our memorable fare. At 40,000 square feet, our ballroom is one of Georgia’s largest, and our 9,800 square foot state-of-the-art Culinary Arts Center keeps us amply equipped to serve up to 4,000 unforgettable meals at one time. We added service to the Gateway Center Arena with their grand opening in 2019.

We are hyper-local about how we source all of our produce, partnering with Freshpoint and Royal Food Service to ensure that 98% of our produce is procured from Georgia and the surrounding states. We source all of our Chicken straight from a local poultry farm in Gainesville Georgia to support our local communities.

Levi Taylor

Where were you born and raised?

I’m a home grown born and raised in Atlanta, GA. Born at Piedmont hospital, started my life in Decatur then moved to stone mountain and went to Tucker High School.

How long have you been with Proof & GICC?

Since 6/2023. I’ve been a co-worker in the past for a lot of the Proof staff management and hourly team members, so transitioning over was smooth since I already had a relationship with the staff.

Where were you before coming to us?

I’m coming from the Americas Mart downtown and UPS global headquarters.

Tell me about your culinary education and training.

My school is no longer around but I went to Le Cordon Bleu in Tucker. I’ve been all over this beautiful country working with a lot of different companies. Fifth Group at South City Kitchen Midtown, hotels (Hilton, Marriott), events like Nascar, Formal 1, X-Games, Superbowl, NBA Finals, PGA Tour, US Open, Kentucky Derby, The Grammys, GA World Congress Center, and World record holding conventions like the AKA 2016,

Have you maintained your passion for cooking outside of work? If so, how?

Yes I have, and it is maintained by just wanting to see people smile and enjoy a good meal. A great meal can change a person day and also put the worries of today behind them for a second. So cooking for family and friends alike is how maintain outside of work.

What is your signature dish inside and outside of work?

Inside of work I don’t think I have a favorite dish to pick from but more so showing staff tricks to keep food as fresh as possibly so the last person to eat has the same experience as the first person to eat. I do make a mean Brown sugar Porkchop and Butter Poached Sea Bass just saying.

Outside of work, I would have to say my butternut squash risotto inside the kitchen but if we are outside on the grill then I enjoy being a grill master and showing food can be cooked perfectly at a cookout with kids and family running around.
